Some people are so creative!! Healthy food can be so fun and delicious! It really is too bad that many people don’t realize that.

The popular fast food chain, Burger King now DELIVERS. Seriously? As if it wasn’t already easy enough for people before to consume this junk! Before, you didn’t even have to leave your car…. now you don’t even have to leave the HOUSE. In addition to what was already a terrible idea… there is a MINIMUM order price of $10 for them to deliver… so you have to order twice as much crap just for them to deliver it! It’s so sad how these bad foods and habits are being made easier and easier…

I plan on feeding my kids healthy, wholesome foods! Sure they can have pizza and cake on occasion… but I will never be a parent who advocates fast food and junk. The habits you are taught as a child often stick with you as you grow up. Teach your little ones good, healthy eating habits early on!

Mexican Poblano Stuffed Peppers
 

INGREDIENTS:

  • 1 cup cooked red beans, drained and rinsed
  • 1 cup cooked long-grain brown rice
  • 1/2 cup frozen whole kernel corn, thawed
  • 1 medium tomato, diced
  • 1 small zucchini, diced
  • 2 tbsp onion, finely chopped
  • 1 clove garlic, minced
  • 1/8 tsp ground chile powder
  • 1/2 cup packed cilantro leaves, chopped
  • 1 tsp olive oil
  • 1/8 tsp sea salt
  • 1/8 tsp ground black pepper
  • Olive oil cooking spray
  • 4 large poblano peppers (or 4 large sweet green bell peppers), seeded and cut in half
  • 8 tbsp shredded reduced-fat Mexican cheese blend
  • 4 tbsp low-fat sour cream

INSTRUCTIONS:

  1. Preheat oven to 375°F. In a large bowl, mix beans, rice, corn, tomato, zucchini, onion, garlic, chile powder, cilantro, oil, salt and black pepper. (Stuffing mixture can be prepared 1 day in advance and stored in a container in refrigerator, tightly covered with plastic wrap.)
  2. Spray a large roasting pan with cooking spray. Mound 1/2 cup stuffing mixture into each poblano pepper half and place in roasting pan. Cover with aluminum foil and bake for 40 to 45 minutes. Uncover, sprinkle with Mexican cheese and bake for another 10 minutes.
  3.  To serve, top each stuffed pepper half with 1/2 tbsp sour cream. Serve immediately.

Protein for Vegetarians!

I was a vegetarian for 21 years, so I know what it’s like! It’s important to consume enough protein each day to maintain and/or build lean muscle. Remember, the more lean muscle you have on your frame, the faster your metabolism will be. Try to get between 1-1.5 grams of protein per pound of body weight.

Remember that although some foods do contain protein, not all of them are COMPLETE proteins. In other words, some foods are considered incomplete proteins if they are missing one of the essential amino acids. That’s why as a vegetarian, it is important to eat a wide variety of protein rich foods so as to get ALL of the 9 amino acids. These 9 amino acids include: tryptophan, threonine, isoleucine, leucine, lysine, methionine+cystine, phenylalanine+tyrosine, valine & histidine.

Good sources of protein for vegetarians:

  • Eggs
  • Greek Yogurt
  • Milk
  • Cheese
  • Most dairy products
  • Tofu
  • Black beans
  • Kidney beans
  • Quinoa
  • Most other legumes 
  • Almonds
  • Cashews
  • Most other nuts & nut butters
  • Soy products

There are many other options besides those I just listed, but do some research to find alternatives if these are not your favorites. Keep in mind that many of the “fake meat” products are highly processed. While it’s fine to eat these in moderation, try not to rely solely on them for your protein intake!

My Chocolate Protein FroYo Recipe!

  • 6 ounces nonfat plain Greek Yogurt
  • 2 TB unsweetened baking cocoa
  • Stevia to taste

Stir all ingredients until smooth. Pop in the freezer for 30-45 minutes. Enjoy! I originally made this as pudding. But if you freeze it, it actually tastes almost exactly like frozen yogurt! So in other words… you could eat this without freezing it! Super simple and healthy! =D
